Antwerpen proeft – The place to be for foodies this upcoming weekend!!

The city of Antwerp organizes the fifth edition of  “Antwerpen Proeft”, what would mean as much as “Antwerp tastes”.  This culinary edition will take place from August 18 to 21.  You will be able to taste a wide variety of culinary specialties, Belgian-French cuisine, Mediterranean, Australian….. brought by both new young talent as Michelin-star chefs like Viki Geudens and Johan Segers. The entrance to the festival is Free, but you will have to pay for the food you want to taste. For me this a “Must Do” if you are in Antwerp as it is the ideal occasion to taste the best Antwerp has to offer.  And let’s be honest, I can’t find a better way to do this then with good food and drinks??? Do you?

 So if you are free this weekend, try to visit the festival, you won’t regret it

Soya

Thinking of soya, the link to Asian food is immediately made. Personally I wasn’t really convinced in the beginning when the soy products started to find their way into our kitchens. But I have to admit that I have changed my mind as I started using more soya products when cooking. Did you know that soya was already used as nutrition in the 18th century?   The most well know soya product would definitely be soya sauce used to dip your sushi or for stir-fried dishes .

The reason why I had to start using Soya products, is because my girlfriend has become lactose intolerant. So now I use soy milk, soy cream, soy margarine, etc… There is 1 thing I don’t use, and that’s Tofu. The reason is simple, if I want meat I eat meat and nothing to replace it!!  You guys should really try to sometimes replace dairy products with Soya products, for example if you make my chocolate cake (that I posted a while ago), use the soy margarine… you won’t taste the difference… and this is the case with most of the soya products.

Some very good cookbooks I have for cooking with soya (as a base) would be “Elke dag gezond” in Dutch and “The new soy cookbook” in English (by Lorna Sass). The following recipes that I tried were really nice:

  • sea-devil with basilsauce
  • Cannelloni filled with punchy lamb
  • Chicken filled with baby pineapple

 OK, it is true that some dishes just need really farm butter. But some for some things you can replace it .

A touch of class

Let me take you on a nice trip down memory lane. For many years my parents, my brother and I used to travel to Italy by car.  When my  brother and I got  a bit older, we always stopped in hotel “Du Parc”in Obernai. Obernai is a little town  just outside of Strasbourg (well-known for the European Parliament, etc….  ) located in France’s Alsace region.  What you will notice if you ever get the change to go to there, is the German (maybe even Austrian) influence that is noticeable everywhere as this region has been part of Germany for many years. What I like about this region is that you  have the feeling that you are traveling back in time because of  the nice flowers on the balconies, seeing beautiful murals (on façade of the houses) and the friendliness of the people. For some strange reason I always feel like putting on some Lederhosen (don’t worry, I never really did it) when I’m walking around.  Sorry, I got carried away for a moment J , back to hotel “Du Parc”.

 Hotel “Du Parc” is a 4 star hotel, but if you ask me it could easily be a 5 star hotel. The hotel has a good combination of old Alsatian style, modern elements mixed with a touch of class. This goes for the whole hotel. The rooms are also of a nice size and you can choose between modern or local style rooms that have all comfort needed. You can also relax at the in- or outside pool, spa, or peaceful garden. My favorite part of staying at this hotel is eating (surprise surprise). At lunchtime you eat at this old fashion “Stub” where you can enjoy the best local cuisine (don’t worry it’s not only heavy food) and enjoy this accompanied with a nice Riesling (which is the wine from this region and one of my preferred white wines).

In the evening, it is the total opposite story!  Be ready to bade in luxury.  In the “La Table” restaurant, the Wucher family (Owners of the hotel) tries to give you the best gastronomical experience you have ever had. A mix of local cuisine is a brought in a refined way and French cuisine. Highly recommended is the home made “Foie gras” or as dessert the “Tarte aux Brimbelles” (a blueberry tartlet) and again all of this accompanied by superb wines, as the hotel has a wonderful wine list (personally I like trying local products). Being served by the owners from the hotel is something I highly appreciate and is something very rare in this kind of hotels.

After a nice night of sleep you will be very pleased with the breakfast, food as far as the eye can see J + freshly squeezed orange juice!!

Chocolate, sweeeeeeeeet like chocolate (part 2)

And so the story continues …

Another one of my favorits would be Dominique Persoone’s  Chocolate Line. Has 3 stores, one is even mentioned in the Guide Michelin. The Antwerp store is  in the previous Royal Palace, even Napoleon lived in this palace. His chocolates are served in the world’s best restaurants like Oud Sluis en Hof Van Cleve ( 17th and 15th best restaurants in the world) He created  a special chocolate experience for the Rolling Stones’ birthday, the chocolate shooter. He gives master classes worldwide and the list goes on and on with great achievements from Dominique.  So basically if you are in Antwerp or in Bruges, try them!!  Or if you get to chance to see one of his master classes, do it because they are really special. If you on the other hand want to experience the chocolates they serve at the Royal Palace in Belgium, you should definitely try Goossensand feel royal 🙂

Last but not least, I should talk about Callebaut chocolate that now celebrates its 100th years. Callebaut started with producing chocolate bars and is one of the major producers of chocolate for both consumers as professional chocolatiers. There chocolate bars get used for making chocolate mousse, pies, and are used as base for the famous Belgian chocolates.  After merging with Cacao Barry, Barry Callebaut is the world’s biggest chocolatier . They also gives professional workshops worldwide and even have an own academy.

Why do I always get so hungry when writing this stuff 🙂

 

Chocolate, Sweeeeeeeet like Chocolate (part 1)

If you ask people what they know about Belgium, 90% of them will answer that it is famous for its chocolate (besides Beer and Waffles..) .  More in particular the Belgian “Praline or Bonbon” .

Jean Neuhaus(from the famous Chocolate brand) was one of the first people in the 20st century to produce the famous Belgian Bonbon.  Congo (in Africa) was as some of you might know, a Belgian colony during this period and the cacao was originally from there. Today the cacao comes from all over the world. But we have to make a distinction between factory produced chocolates and artisanal made chocolates. When I’m talking about factory made chocolates, I mean that they are made on an assembly line … From these chocolates my absolute favorite (and I think from most Belgians ) especially price-quality would be Leonidas with their world famous Manon  a White chocolate filled with praliné with coffee butter cream. The advantage of these brands is that you can buy them all over the whole world and they will always taste the same.

When I am talking about artisanal made chocolates, it means that they are handmade by a master chocolatier. And I have a few favorite ones. First of all Del Rey , Located right in the center of Antwerp’s diamond district (to all the men out there, if you take your wife, watch out!  You’ll either have to buy some chocolates or some diamonds)  and is a highly rewarded chocolatier . Del Rey is also part of Relais Desserts. They have one foreign branch, which is located in Japan.  Might I advise you that before buying chocolates, piece, icecream, etc… you might want to make a short trip to Del Rey’s  tasting room. I’ve already spent quite some time here with my mom (who really loves sweet food). I usually choose the chocolate plate which contains an assortiment of  refined chocolate pastries, chocolate crème brûlée , etc… (I once took it with a hot chocolate, don’t ever do that, it really was a chocolate overload). If I could I would even ate the plate, it is sooooo good!! For all you non sweet lovers, at the tasting room they also have a  regular lunch menu. (so now you’re out of excuses).

Crespelle Ricotta – Spinach

Crespelle are actually pancakes, but instead of putting sugar, you put salt (not the same amount of course).  I like to serve them with a ricotta and spinach filling accompanied with a tomato sauce completing the dish. It might seem that it takes a long time to make this dish, but this is absolutely not true. Just try it!

 Ingredients: (for 4 people)

Crespelle:

  • 250g flour
  • 6dl milk
  • Pinch of salt
  • Fresh parsley
  • 2 eggs
  • Butter/margarine

 Stuffing:

  • 250g ricotta
  • Spinach (frozen is good enough) as a measure I usually take the plastic box of the ricotta and fill it to the top with spinach. And that is the amount I use for this stuffing
  • 1 lemon
  • Paprika powder
  • Nutmeg
  • Parmesan Cheese (grated) 
  • Basil
  • Salt & pepper

Tomato sauce:

  • 3 thin cans cubetti (peeled tomatoes) 
  • 1 Chicken stock  cube
  • Pepper & salt
  • Garlic
  • Olive oil
  • Fresh basil
  • Pinch of sugar
  • Salt & pepper
  • White wine (glass)

 Getting Started:

We gonna start by make all the “pancakes”.

  • Chop the parsley (only the leafs)  very very small (you can  either do it by hand or machine). After chopping it put it on paper towel to dry a little bit.  We do this by first putting the flour in a bowl.
  •  Add a pinch of salt and some of the milk. Stir it all until it becomes a nice smooth mass, now add the rest of the milk and again stir.
  • Add the first egg, once this egg is nicely mixed add the second egg.  
  • Add the parsley. Let the mix set for 5 minutes

  • Take  a pan (if you take a bigger pan, you’ll have less pancakes, if you take a small pan, you’ll have more 🙂
  • Put some butter in the pan (when the pan is very warm)  and spread it with a piece of paper towel.
  • Put some of the milk mix in you pan with a Ladle (pollepel) and while poring it in your pan you turn your pan until you mix is equally spread (and you have a round form). Don’t put too much in the pan otherwise your pancakes will be too thick. Turn the pancake when  you see that the top is less liquid.

  •  Keep doing this until you have finished all the mix. You now let the pancakes cool down.

The filling:

  •  We first have to defrost the spinac . I usually just put it in a pot on a low heat. Once everything is defrosted, I let it leak through a sieve (zeef) to get rid of all the water that the spinach has absorbed. You can leave it for about 15min.
  •  Continue with putting the ricotta in a bowl
  •  Add a handful of grated parmesan cheese, handful of thinly cut basil, some lemon zest (you use zest grater for this), a little bit of nutmeg, pepper and salt. I also add a little bit of Red paprika powder (sweet) And Finally add the spinach. FYI for the handful’s if you have small hand, add a second hand 😉
  •  Mix it all together.

The Tomato sauce.

For this dish I want to keep the sauce a little bit sour (not too much of course.

  • Put  your pot on the heat and put some olive oil in the pot. Add a garlic clove (peeled)
  • Once you hear the garlic starts to ‘bake’ you can add the thins of tomato.
  • Add the glass of wine, a handful of cut basil, pepper, salt and the chicken stock cube
  • Don’t throw the tins from the tomatoes away (or not yet). You notice that there is still some tomato in it. Just fill one of the thins with water. The poor that water in the next one. Then in to the last one.  Now you can poor it in the pot.
  • Let the tomato sauce cook for about 15 to 20 minutes on low heat.
  • Mix the sauce.

Now we have made all the basics, we can start  assembling everything  🙂

  •  You take a pancake,  spread some of the ricotta mix  on the pancake (like you would be spreading on a sandwich, you can take a bit more than you would usually put on your sandwich )

  •  Roll up the pancake and put on a backing tray. First put some of the tomato sauce on the bottom of the tray
  •  Once tray filled. To it all with tomato sauce and spread some grated Parmesan cheese over the top.

Once you want to serve it, put it in a pre-heated oven of 190-195°C (374-383°F) for about 15-20 minutes.

Little Italy

You know the feeling, when you are somewhere and you smell familiar things that makes you feel at home?  Last week I went with 2 friends to Raineri in Genk (eastern part of Belgium) to by some wine and Italian products.  One of my and my brother’s favorite shops. Every time I enter this shop I instantly feel in Italy (like I was Beamed  up like scotty by Captain Kirk in Star Trek). The smell really brings me right to my Nonna’s kitchen (and man do I loove that kitchen). I think even my friends felt it?! Entering Raineri is really great, because everywhere you look you see ITALY, every product, ingredient, etc… The first image when entering in the shop is like a picture in a frame. They even have lots of products of their own, like their Ligurian olive oil (that I always buy). Usually I take their Biologica (just because I like the taste, no other purpose) , but all of them are really good for putting on salads, etc… For cooking I would find it a waste of using such a good product and burning it. They have a whole wall with all different kinds of pasta… it’s not an easy job choosing… If you have doubts or questions or want extra info, the staff of this shop is really friendly and helpful. You can really see their passion for what they do when they helping you finding the product you want.

In case I’m not hungry yet when putting the first step in the shop, you can be sure I will be hungry by the time I see their counter. At that moment my stomach is going like “Hey buddy, gimmi some food” . Fresh lasagna’s, cannelloni , ravioli, gnocchi, all nominations of dried hams (Parma, San Daniele, etc..), cheeses, ….

 Then walking down to the basement, you will find a wide variety of Italian wines and this in the setting of an old/new wine cellar.

Some nice wines I’ve bought there from Azienda Marcato: ‘IL TIRSO’ SOAVE CLASSICO SUPERIORE DOCG and BARATTARO IGT NOIR. And you should really try the “Durello Met. Tradizionale DOC 36mesi” (jammi) But feel free to pass by, Raineri sometimes has wine/ food tastings.

Worth the stop!!

Southern Tuscany

Most people when they go to Toscana, they always go to the traditional cities: Firenze, Siena, Pisa, Lucca, etc… Obviously these are cities that you have to have seen. But if you would ever go to Tuscany and want to discover something new, not too touristy, you should really check out the south of Tuscany.  I’ll start with my personal favorite, Saturnia. This city is mostly known for its hot water source. It is said that the water is really good for your skin. I think I should also mention that the water has a sulfur (zwavel) smell, basically it smells like rotten eggs … But everything for a soft skin 😉 . You can either go to the “Terme di Saturnia”, a luxurious SPA, to enjoy the warm water or you can go to the natural source with its waterfall.

When I was in Saturnia, I stayed at Hotel Villa Clodia, a nice small family hotel. From the rooms you have a nice view over the valley (as saturnia “town” is a little bit uphill ) and a few steps from the main square (only square) of the village.

My parents and some friends stayed at a Different hotel, which is about 5 min away from Saturnia. They stayed at the “Relais villa AcquaViva” . A romantic hotel surrounded by vineyards and olive tries, an ideal place for relaxing. 

A really nice restaurant in Saturnia would be “I Due Cippi”. But don’t hesitate to ask at the hotel where you should go to have a good meal. Going  to small local trattoria’s is the best one can do when staying in Italy .

One evening  (and I will never forget as that evening my girlfriend got the news she passed her examens for her Master univ studies ) we went to a very nice small local trattoria in Montemerano. Montemerano is only  a 5 minute drive from Saturnia (a really nice small town). The trattoria was called “Cacio e vino” serving local dishes and wines for a really correct (and even low) price. We really liked this restaurant.  (It’s not fancy, but man was that some good food)

A village you should also visit, is Pitigliano. This is a town that stands on an  tuff hill, really picturesque. We had lunch at Il Tufo Alegro.

The most famous town of southern Tuscany will without any doubt Orvieto, it is known for its famous white wine. Already when driving towards this town you can see its beauty. Before  for lunch we enjoyed a nice glass of Orvieto on a sunny terrace. We had lunch at ‘L’asino d’oro’ (Vicolo del Popolo 9, 05018 Orvieto), what actually means golden donkey in English. Again like always we enjoyed the wonderfull local dishes… I got this tip from my mom and dad.

Breakfast…The most important meal of the day!

A while ago  I went to Milan with some friends for one day.  First of all because the plane tickets were extremely cheap  + any excuse for going somewhere or to eat is good enough for me….

The only “disadvantage” about these cheap flights is that they are always so early. So the first thing we had to do when arriving in Milano, was to find some Breakfast! I have to admit that I already ate something at home before leaving for the airport, but what the hell… I could handle a second breakfast. An Italian colleague of mine from Milano had given me a few nice spots to have breakfast. One of these was bakery “Princi”. It is really centrally located in Milano. Only a 3 minute walk from “Il Duomo”.  Although you would never go there if you don’t know it. When we finally arrived there, I could not believe my eyes. It was one of the most beautiful things I had ever seen

A HUGE counter filled with more breads, croissants, focaccia’s, pizza’s, sandwhiches with freshly cut parmaham, macarons ,pies, cookies etc… then you can imagine(I believe that this is how heaven must look). Of course, the big problem was, what to choose (if it were up to me I would really have tried it all)?  Everything is hand made in the shop’s bakery. And all those freshly made products can be eaten there or taken out.

 So if you ever get to Milan, this is THE breakfast place you don’t want to miss!

 Once again I found a reason to play the lotery !

Travel and Leisure guide published its 2011 list of the world’s 50 best hotels

I’ve gone through the list and I honestly feel like leaving for a world trip!!

So sit back and start dreaming…

 My personal top 10 out of these hotels would be: (Message to my girlfriend, “Don’t get crazy ideas :- ) )

  •  Mandarin Oriental Dhara Dhevi Chiang Mai, Thailand … I think the below picture speaks for itself….

  • Lodge at Kauri Cliffs Matauri Bay, New Zealand: I call it a room with a view 🙂 🙂

  • Hotel Caruso, Ravello Italy… as beautiful as Lucio Dalla’s version of the song. For me the Amalfi coast is the most beautiful place on earth!!! (but if you’re driving there, you’d better hope God is a good friend of yours as they show no merci in southern Italy. Red light is just a suggestion)

  • Couples Tower Isle, St Mary Jamaica. Feel like Bill Gates on your own little island

  • Turnberry, Scotland. For all golfers out there, Colin Montgomerie has got his summer Golf School at this hotel!!

  •  Intercontinental Resort & Thalasso Spa, Bora Bora. Well this is what heaven looks like (I think, or better I hope). If you would ever go there, don’t forget to check out the nice diving spots in one of my previous blogs

  •  SingitaKruger National Park, South Africa… But only if you don’t mind see lots of wilde animals 🙂

    •  Machu Picchu Pueblo Hotel, Peru. I could honestly already see me hear … surround by beautiful nature, Machu Picchu… Lucky you a train stops right in front of the hotel ;-), because that would have been a hell of a walk

  • One & Only Palmilla, Los Cabos. Well, just look at the below picture… I have no words
