For singles or a whole family

This dish is good for single people, but you can easily make it for a whole family, just by doubling, tripling, etc…  the ingredients. This one is made with chicken, but y ou could also replace it by another meat or even use some fish, or sometimes change the salad, or add tomatoes or a forgotten vegetables, replace the herbs by cumin, or the Guacamole by sour cream. Like every dish you should try to make it until like it 100%

Ingredients:

  • 1 chicken filet
  • Iceberg salad
  • Olive oil
  • Guacamole (you buy it or make it yourself, I’ll give you the recipe anyway)
  • Cucumber
  • 2-3 pita/kebab breads
  • ½ lemon
  • Rosemary
  • Salt, pepper, paprika powder
  • Honey

FYI:

You might ask, what the hell do I do with all the left over ingredients? Well Here are some tips… again for single people, as we don’t throw stuff away.

  • The pita breads that remain, you can just put in the freezer and heat them in a toaster or oven next time you might need them
  • The iceberg salad and other remaining vegetables, you can just use the next day (or two days after)  with maybe canned Tuna in olive oil or with salmon, etc… and use the remaining guacamole as sauce… or you can also make a dressing with the remaining lemon (and add some honey and mustard)
  • In case you prefer buying a whole chicken instaid of a filet, you just put the pieces in the freezer for the next time you might wane use chicken
  • As for the Rosemary, I usually put my fresh herbs in my top freezer drawer, and every time I need it, I just take a bit and put it back (be quick, because once it melts … you cannot put it back in freezer)

Get started:

  • Cut the chicken in small pieces.
  • Heat the pan with some olive oil in it. Once oil is hot you put bake the chicken.
  • Add some of the rosemary (this is upon taste), add a pinch of salt, pepper and paprika powder.
  • Bake chicken cubes until they are golden-brown on all sides.
  • Add the juice of ½ lemon and a drizzle of honey (again, this is upon taste, the more honey, the sweeter it gets).  Cook it until half of the juice is gone. Turn off the heat.

To fill the bread

  • You could add some Guacamole (to make it, just use 1 or 2 soft  avocado’s, squeeze them until they are all puree (youcould also use blender), add some fresh mint and coriander, salt, peper, a glove of garlic and a drizzle of olive oil. Mix it and voila)
  • Cut up some ice berg salad (or you could also use rucola or any other type of salad that tickles your fantasy)
  • I add some cucumber, but you could again replace it by carrots or tomatoes, etc…

You heat the pita breads in the toaster (or oven or pan)

Cut them open and stuff them 🙂 .

Here I am again. If these last suggestions are still not your kind of cookie, than I think you’re on your own.

Maybe you’re more into giving books? The book that actually has my interest this Christmas is one written by Paul Van Craenenbroeck “The magic behind the Michelin star” (I think it is only available in dutch and French). Paul van Craenenbroeck was a Michelin star inspector for about 22 years, who decided that it was time to reveal some unknown facts about the world behind the red restaraurant/hotel star guide. According to Mr Craenenbroeck, Michelin is a company that stands for French chauvinism, nepotism, incompetency, conservatism en bureaucracy… But I’m pretty sure it will not be totally negative, as he worked there more than 20 years. I don’t know about you guys, but I can’t wait to start reading it….

Cookbooks, well you could always look in my blogposts about cook books. Somtehing that I find important about a cook book, is that everything is well explained and the recipes are things you can actually make without having to buy a lot of new kitchen equipment. So basically it is important to actually open the cookbook before you buy it and don’t be influenced by the fact that it’s a cookbook that gets a lot of publicity, because this doesn’t always mean that it is a good cookbook.

For singles I would recommend the “Lekker single kookboek’ by William Wouters (yes from restaurant Pazzo) and Marc Declercq. For Vegetable lovers, I would highly recommend one of the Cookbooks from Frank Fol aka the vegetable cook

And for my English speaking friends, according to the NY times, these are THE best cookbooks at this moment… So it is up to you 🙂

Or maybe you’re more of a “make the present yourself “kind of person? In that case, you might wanna make a cook book yourself? Or another book? I’m actually going to make one myself. I’m going to make it via Albelli, because you can not only make it a ‘picture’ album, but you can also add writing 🙂 It is  like being a famous chef and making your own cookbook 🙂 . Not sure yet if I’ll give it as a gift to someone or keep it for myself 🙂 . I’ll show you the result once I have it. Let me know if you have already made one, I’d love to see yours. FYI here you can get some inspiration

My Christmas present list part 2

For those who were not inspired by my post of yesterday, maybe today you’ll have more luck?

I know it is not easy to find suitable presents for everybody… you always need to keep in mind which budget you want to spend….On top of that you also have to find the time to buy all your gifts.

I already started my Christmas shopping because the rush has not started yet 🙂

If you don’t feel like shopping the regular way, there is always the possibility to use eBay for example. You would really be surprised how many beauties you can find here. Cookbooks, Wine, Cookware, etc…  eBay also uses Paypal to ensure that you can safely shop on eBay!

The infographic below illustrates the most important conclusions of a yearly survey conducted by eBay on Christmas trends. 1 out of 5 Belgians will do their Christmas shopping online and this will not only happen on their computer. Smartphones and tablets are becoming more popular devices for online shopping. Did you also know that 1 out of 4 Belgians receive unwanted gifts and that 39% of them decide to keep it… Let’s try to avoid this and choose the right gift for our loved ones!

Something that I don’t mind receiving and/or giving are food & drinks.  I know, there’s a lot out there….

Christmas is also about giving something special (to me it is). Something that fits right in that criteria is for example a bottle of Duvel Tripel Hop. Tripel Hop is a special beer made by Duvel Brewery made out of 3 high quality kinds of hop and is a real pleasure to drink!! But you’ll have be quick to buy some as the production of this beer is limited and doesn’t get made a lot (last time was in 2007). Or maybe you could go for the De Konick Cuvée Modeste?  This is again a limited edition, but this time by the Brewery that is actually located right in the center of Antwerp. One thing is for sure, you’ll have to be quick!

Another great gastronomical present for Italy lovers would be an assortment of sauces or wines from Fattoria la Vialla. Olive oil, fresh pasta sauces, tapenades, fresh pasta, wine, honey, etc… The famiglia La Franco makes it all. And may I add that all the products they make are very good. I’ve already tasted some of their sauces: the peperonata, Melanzane alle parmigiana, pesto and napolitana. I also had some of their fresh pasta and Olive oil… eating their products is like being in Italy. The olive oil is a bit more spicy. FYI softer olive oils in Italy are from the region around the Garda lake and Imperia (around San Remo). The more you go south, the spicier and stronger the oils get. The wine I cannot judge, as I didn’t try it yet… but rumors say that they have some nice Chianti wine. If you would try it, let me know. BTW, the delivery fee is free!

You can either choose yourself for an assortment or you can buy one of the prepared baskets.

The thing about this kind of present, you’ll also be able to enjoy it 🙂

If you want to buy some Wine, Whiskey, Porto, etc.. but prefer tasting it before buying it to give it as a present,  I would advise you to make a little trip to Herentals (sorry for all the foreign followers, but I’m sure you’ll have a shop like this in your city).  As in Herentals you can find Van Eccelpoel, but again, I’m sure you’ve read all about them in one of previous blogposts. I’m sure the Van Eccelpoel team will be able to guide you to find the best gift assortment.

Still didn’t find something… don’t worry I’m not done yet 🙂

My Christmas present list

We all know what Christmas means (beside the religious part), presents, presents and more presents . I was thinking of giving y ou guys some ideas what you could buy for the foodies in your family, that would for suuuuuure make them happy. Mmm, or  maybe this is just MY present list 🙂 🙂 (I’m one sneaaaaaaky person) and a hidden message to my present buyers? Ok, let’s go, I’ll start with cookware

I really love pots and pans!! Don’t you? Even if you already have a closet that is way too full with them…

Ofcourse not all pots and pans are alike. My favorites are without any doubt the ones from Demeyere and the ones from Le Creuset or Staub. These ones are in every foodie’s fantasy  and ‘wanna have’ thing.

These are not the cheapest presents, ALTHOUGH… Specially for you people and for more modest budgets Demeyere for example,  launched the Young series (I’m sure you read about it in my previous post).

But they were not the only ones  Staub also has done something special. For the moment they have a promotionset, this set consist  1 big  cast iron pot of 24cm (3,8l)  and 4 little ceramic  cocottes  of 10cm (0,2l)…  they come in Black, Cherry, Griffith grey and blue. They usually are priced 219EUR,  but NOW they are only 159EUR!!!! AND  the best of it all is that if you receive this for Christmas, you can immediately use it for New Year’s eve.

MY personal favorite (of the cookware that is) for this Christmas would be the GreenPan. You might ask, what is so special about this pan? Well pan has an ecological anti-stick layer  at the inside AND she just looks nice J. Just some ‘FYI’ the consumer organization tried 14 pans and GreenPan got a score of 77/100 and gets sold in more than 80 countries.. so it has to be good… But the best is the price, only 34,99EUR… (so more budget friendly) if I would receive this, I  would be as happy as the day I ask my girlfriend to marry me 🙂

Or maybe you prefer giving a very good cooking knife?  Ok, in this case I might admit that they are rather expensive, but I’m of the opinion  that this is something you’ll only buy ones (I’m still using the ones I bought in Chefschool). The knives that are considered as one of the best knives available or seen as the ‘it’ knifes are the ones from  Miyabi. They now just released they’re new 600D series (what’s in a name 🙂 ) . What I find important, is that a knife is in 1 piece and the handle cannot get loose from the cutting part!  My personal favorite would be the Santoku (I have expensive taste). For these knives you must count between 100 and 200 EUR.

NO? Cookware not your thing to give as a present?? Too expensive?

Low and high budget dining within a few meters

Saturday we went for a dinner in Brussels, to Restaurant Houtsiplou. I got this tip from a friend of mine who has been here a few times. When I arrived on ‘Place Rouppe’ after a very long search for a parking spot, I saw that world renowned restaurant “Comme Chez Soi” was located on the same square :-). So in less than a few meters you’ve got a high and low budget restaurant…

So there has been a moment of doubt which restaurant I should go to and the valet parking made it even more interesting  too bad I had already found a parking spot and it is a good thing my wallet got me back to my senses, so ‘Comme Chez Soi’ will be for a next time 😉 + when I have hamburgers and French fries in my mind, it is difficult to get them out

Once inside Houtsiplou, you get an instant smile on your face… All the bright colors, funny creatures on the walls + I know I’m going to eat junk food :-).

Anyhow, I didn’t come for the interior but for food! Houtsiplou is well known for being a family & child friendly restaurant (so I’m right at my place) and for its delicious hambugers.  Also very good to know, vegetarians can also accompany their friends here, as all the burgers also get served with Tofu instead of meat and there are also lots of other veggie possibilities on the menu. We’re not veggie, so out with the tofu.

I went for the Basico Hamburger, 225g of beef, fresh bearnaise sauce, salad, tomatoes and fried onions (mmmm, I want it again). With some Homemade fries on the side.

My woman took the Pato, a burger with duckmeat, foie gras (that melted nicely over the duck meat)  and a green  pepper sauce.

When we received our plates it was very silent for a couple of minutes … The best sign that it was good!

I could have still gone for a dessert, because they all seemed delicious…  Tiramisu with Speculoos or Apple crumble or Cheesecake with Speculoos already make me hungry again… but I think I made a wise choice not taking a dessert, because I would have felt too stuffed J

I would really recommend this restaurant to everybody who is in Brussels with their family and wants to have a great fresh burger !! Again the only disadvantage is the parking … but that’s a common problem in every big city I would think

My hunger led us to Dôme sur Mer

Friday was again one of those evenings I didn’t felt like cooking…. So there was only 1 thing left to do, pick a restaurant 🙂 . This time we decided to go to “Dôme sur mer  “. This restaurant is located in Berchem, near Antwerp and is the second restaurant from  Julien Burlat, chef and owner  from the 1 Michelin star restaurant “Dôme”.

I had actually already been to “Dôme sur mer” in May for my birthday with my whole family. As this time it was just a romantic dinner with my girlfriend. She always makes my dinners more complete 🙂

The architecture of both (or even 3) building from Dôme, Dôme sur mer and Domestic (bakery) is just beautiful, high decorated ceilings, but also the outsides are very beautiful.  In these restaurants you get and instant coziness feeling .

As you might expect from the name, “Dôme sur mer” is specialized in fish. One of THE trade mark dishes of the restaurant is the lobster with sage butter sauce. I tried this last time I was here as an appetizer (yes, I was greedy). This time we got led by this week’s suggestions. Not that there were not enough dishes on the menu, but I always like to taste new things they chef recommends.

Of course, the best way to start a romantic dinner (or any other dinner) is with a niiiiiice glass of bubbles 🙂  . We took the Spanish Clos Amador Brut Riserva which had a rich and fruity flavor. Just what we needed to get started. To not immediately be tipsy, we took some iberico ham to go with it . Maybe a ‘not done’ choice in a fish restaurant, but hey I just love HAM!! (FYI, the ham melted on my tongue)

This got followed by some Mackerel with pickled vegetables  (carrot and red cabbage) with a grain mustard dressing. This was a good combination of flavors, the freshness from the vegetables with a touch of acidity together with the softness of the fish. To accompany this we just took the house wine, bot white, from a dryer kind and for my girlfriend a slightly sweeter wine.

As main dish, I had the bream fish with braised savoy cabbage.  My first bite from the cabbage, brought me back to my childhood, it had the flavor like when my dad used to cook (ME like). Again very nice combination, I would want to be negative… but I just can’t… ok, maybe an extra piece of fish wouldn’t have been bad 🙂 . I drank a glass of red Poggialupi by Rodano with it.

We ended by sharing a Lemon tartlet. If you look really close to the below picture, you can see my girlfriends fork ready for attack 🙂

Overall a very nice restaurant, as the second time was as good as the first time. I wouldn’t call it the cheapest restaurant, but the prices are still on the normal side.  I can’t wait to go to restaurant Dôme in January.

Wine discovery at the aperos de bordeaux part II

In the surveying eyes of  cyclist Stanneke Ockers I went to the last Aperos Vintage de Bordeaux in Antwerp or better. I must admit that I liked this edition a lot, even better than the one from last week!!

I don’t  know what it was that made this better, but there was something that gave me a great feeling from the moment I walked in café Mombasa . Like I come here every week … the place was really packed! Café Mombassa is a corner bar right in front of the city hall of Borgerhout with an interior  you would see in weekend issues  of Weekend Knack magazine or or some other interior magazine… It doesn’t get more vintage than this. With one remarkable item, namely the original bicycle from Stanneke Ockers  ok and maybe also the very large picture of him :)….

After a few minutes the South of border band featuring Bruno de Bruxelles started playing, they played a mix of jazzy, Latin American and bluesy music. This made the evening even smoother.

But ofcourse this was a wine event, so the main thing I was here for, was wine 🙂

I first started off with a nice glass of bubbles, a Crémant de bordeaux blanc –Cuvée Andrea by La réserve de Pabus, a very nice refreshing starter to loosen my taste buds (for who wants to know, almost 100% use of Sémillon grape).  You can’t stand on one leg (or not long)… so I continued with a glass of Crémant de Bordeaux Brut Rosé by Jaillance, an immediate taste of red fruits. A real harmony in my mouth. This rosé crémant was made entirely out of Merlot grapes (that you might know is one of my preferred grapes). So far my evening was only going crescendo… it looked promising for what was to follow.

As you might remember from last  I wasn’t really crazy about the white Bordeaux wines… but the Graves by Château Pont de Brion  that I had this time did have everything  to convince me. You could taste that this was a wine that had been in a barrel for a while, also it was a very full taste in your mouth… some might call it a more complex flavor. In the “technical” details it said taste of pineapple, but I didn’t really taste this (but that could just be me 🙂 ). Le moment supreme of the evening was the red Fronsac by Clos du Roy a wine with a lot of character and 90% Merlot which gives it a notions of red fruit (but I’m sure you remember this from my post from last week).   All 4 wines would be wines I see myself adding to my collection of wines …

So conclusion, I passed a very nice evening and I hope that the organisation will have some more of these great after work Aperos vintage de Bordeaux, maybe in Gent ? If they do, all you guys should check this out! What more do you need than a good bar, nice wine and good music (and I have to admit, nice young ladies 🙂 )

Feel like Tomba La Bomba! part 2

And so the story continues

As you might expect my trips wouldn’t be perfect without Gastronomy :-), especially when I’m with my family. And Valtellina (this is the region Bormio and Livigno are in) has a lot to offer.

When you have a little walk through the ‘city’ center of Bormio, it is not big, but reaaaaaally nice and you might wanna stop at the original shop of Braulio, this is THE local Amaro or bitter beverage based on aromatic mountain herbs (my brother’s preferred amaro).

Some local dishes/products you should REALLY try are

–          Pizzoccheri (my favorite)

  • a type of short tagliatelle, a flat ribbon pasta, made with  buckwheat flour and  wheat flour. They are cooked along with green  Savoy cabbage, potatoes and layered with pieces of Valtellina Casera cheese and ground Grana Padano or Parmigiano Reggiano, and dressed with butter and sage. The ones my grandmother makes are really the best!! Mmm, just thinking of them makes me want them NOW

–          Sciatt: these are small balls (like cheese crockets) made with buckwheat and stuffed with Casera cheese (or another local cheese like bito or Scimudin)

–          Bresaola is dried salted beef meat aged for two years. I used to be from horse meat, but nowadays it is just beef

–          There are still lots of other dishes to explore in this region (fyi if you are on a diet, you’re screwed 🙂 )

Ofcourse all this heavy food needs can’t stand on its own, it needs to wine to go with it 🙂

The 2 biggest vineyards are Nino Negri & Nera. Both of superb quality. Something that you must know about the wines from this region, is that they are also made of Nebiollo grapes (like in Piemonte for Barolo) in combination with the local Chiavernasca grape. White wines are rather exceptional in this region as most of the vineyards make red wine. A White wine from this region that I like a lot is the Ca’brione from Nino Negri. The red wines you’ll have to try are Inferno, Grumello, Sassella and Sforzato. Sforzato is the top of the bill!! Really!! Very Yummy. You should also try Fruit grappa with Mertilli for example from Schenatti. (FYI, you also visit this vineyards if you want)

Feel like Tomba La Bomba!

With the winter and snow coming, I’m sure lots of you guys will be looking forward to go on their winter holidays and start skiing (or snowboarding) again?

If this is indeed the case, I would advise you to go to Bormio or Livigno. Not only because my dad was born in Bormio and that most of my family lives here, but  also a world renowned ski places! Bormio for example has already hosted the World Ski Championships a few times and is also one of the preferred World Ski Circuit stops. So if you like the challenge, you can feel like Alberto Tomba or Debora Compagnioni  (who you can even bump into, as they often come here to ski).  Livigno on the otherhad would be most famous as being a tax free-ski village right next to the Swiss border. Livigno has 115 km of slopes at a height of 1815m until 2797m.

I’ve really been looooooooooots of times to this region, mainly to visit my family ofcourse. Not so much for skiing strange enough… I just don’t like doing it. The only thing I do like is the “après-ski” 😉

BUT both Bormio and Livigno have options for the people who just like the white mountains and don’t like skiing. In Bormio I highly recommend to go to the Bagni Vecchi , warm water source. You can either go to the natural source (you used to be able to swim in them), you can go to the public pool (but believe me, you won’t be swimming too long in that hot water) or you could go to the Bagni Nuovo Spa

The most beautiful view over Bormio is without when you are at Bormio 2000, a view over the whole valley. You should really stop at hotel Gallo Cedrone, which happens to be my cousin Francesca’s hotel 🙂 they are right next to the ski lift to go to 3000m and they have a really big terrace where you can enjoy a hot coco or grappa to warm up in winter (or just a glass of wine to enjoy the view in summer). Most of the food they prepare comes from their own farm.

A night at Aperos vintage de Bordeaux

I finally managed to get to the Aperos Vintage de Bordeaux in Antwerp at Café Vitrin last week. I really like the concept of Aperos Vintage, they looked for great locations that change every week. On top of that they always manage to have great music live music or Dj’s , this week’s musical part got done by Bent Van Looy (Das Pop) and last but not least a wide variety of Bordeaux wines.  Also the vineyards that introduced their wines change every week. So basically all the ingredients for a successful event! I must really say that they succeeded in their aim.  The location was really great, I had already passed by Café vitrin lots of times, as the name might already reveal that there are a lot of windows 🙂 and this actually made the café look bigger. Another reason why they can call it a success is because there were a lot of people, I even bumped into some old friends of mine 🙂 which is always great.

But ofcourse the Key element of this event is/were Bordeaux wines. My first question would be, what do you guys actually know about Bordeaux? Besides maybe a few names like Margaux, Saint-Emilion, Pomerol…you might have picked up. Did you know that there are also white, rosé and sparkeling Bordeaux wines?  Something that I personally find very important is at least knowing where Bordeaux is located

And also what the different are in this region vineyards  or ‘Terroires’ like the French  call them.

Don’t worry I’m not going to stuff your heads with tons of information about wine. But I’m convinced that there are always things that one should know… This way you’ll be able to jump into the conversation when the wine topic comes up next time :-).

Red Bordeaux wines are mostly made from 3 kinds of grapes  Merlot, Carbernet-Sauvignon and Cabernet Franc (some also add some Malbec or Petit verdon). For those who want to know more about grapes, check this website . Personally I do prefer the wines that have a higher percentage of Merlot, as they are more fruity. A Cabernet for example would be much more powerful and herbal like.

For the white wines the grapes that are mostly used would be Sauvignon, Sémillon and Muscadelle (some also add for example Merlot Blanc). For the white wines the Sauvignon will mostly give a more citrus kind of flavor to your wine, so basically it gives the wine some freshness.

I think that will do for the moment 🙂 I could keep telling you guys more things, but I have to stop somewhere. But for those who are interested, let me know, and I’ll get you some more info.

Back to Aperos. The best part of the evening, trying the wines 🙂

Red Wines

–          Château Le Clairiot by UniVitis

–          Château La Grosse Pierre – Cuvée la fontaine  by Tutiac

–          Château Beauséjour Hostens

–          La source de château Goubau

My preference went to the ‘Beauséjour’ and ‘La Source’, both stronger wines (I like). The La source was more fruity and then the beauséjour and had a nice aftertaste. This thanks to the higher percentage of Merlot. My personal nr 1 would be the La source. The other 2 wines Grosse Pierre and Le Clairiot are lighter wines and are more as apero.

Overall very nice wines for a great budget and a wonderful concept!! Looking forward to explore next week’s Aperos Vintage wines!
